Legumology is a UK based, family owned and run flour milling and blending business specialising in pulse flours.  Legumology works alongside sister company, Virani, which has over 50 years heritage in the UK food industry and is an M&S A list supplier of seasonings, spices and herbs. As one of Europe’s largest millers of pulse flours, Legumology handles around 7500 tonnes per annum. Its customer base includes food manufacturers throughout the UK and Europe.

 

Legumology’s R&D plan includes developing new pulse flours to meet customers needs and investigating new applications for existing and new products in the range.

 

Legumology collaborate with partners to research potential new product applications and to understand the science behind them.

SPG Innovation worked with Legumology to investigate how different pulse flours perform when extruded under different conditions and to determine whether an expanded texture can be achieved when extruding individual flours and combinations of flours. Initially individual flours was tested to determine the optimal process conditions and degree of expansion that could be achieved. The best performing flours were then tested in combinations to determine the impact on expansion.

 

Working with SPG Innovation, Legumology were able to conduct small scale investigative trials rather than using full pilot scale equipment for the first investigations. This meant that several ingredients could be screened very quickly and easily, reducing cost and waste that would have been incurred by using larger scale equipment.
